I have read about making scrambled eggs in the microwave a few times recently in the HungryGirl newsletter. I have never tried any of her recipes, just her product suggestions so I am not sure if eggs in the microwave are very tasty.

I am thinking about trying it though because the past few mornings I have wanted to have a breakfast taco but have gone to be too late and woken too late as a result. Thus, I have run out of time to really make anything other than instant oatmeal or cereal. :( But if I could do scrambled eggs in the microwave in under 2 minutes as HG reports, I could easily get ready in the morning and have a breakfast taco without worrying about burning my eggs on the stove and needing to stand over them.

So I am excited now. I am going to try this little recipe out – 1/2 cup EggBeaters, 1 wedge of Laughing Cow Light cheese. Microwave for 1 minute. Stir, Microwave for 30 more seconds and then serve on the low fat tortilla with salsa. I’ll report back on how this tastes in the morning.

    AMAZING!! i just tried it–but i did .25 cups instead of .5. i definitely recommend .5 instead, because the laughing cow really overwhelmed the eggbeaters…it was like a cheesy spread instead of scrambled cheesy eggs (i also used southwestern eggbeaters–very yummy).

    just fyi, i tried it for 1 minute in the microwave and they were already done! i zapped them for another 15 seconds just in case, but that was unnecessary. hope you liked them!
